GRILLED CHEESY EGGPLANT || TORTANG TALONG || FILIPINO CUISINE


INGREDIENTS
Egg Plant - 1 big
Egg - 1
Onion - 1 medium finely chopped
Green chilly - 1 chopped
Salt - 1/2 tsp
Pepper - 1/4 tsp
Chilly powder - 1/4 tsp
Oil to shallow fry
Cheddar cheese - 1/4 cup grated
All purpose flour - 1 tbsp (optional)



METHOD
1. Grill Eggplant in stove (medium flame) by turning all sides until a fork pierced goes well to the bottom (approximately 10 mins)
2. Allow it to cool and them remove the skin, smash and flatten it well and keep it in a flat plate
3. In a bowl, beat egg with salt, pepper and chilly powder. If needed, add all purpose flour and mix again and keep aside
4. Heat 1 tsp oil a small bowl and fry the onion and green chilly until it turns to golden brown and then add it to the beated egg and mix well
5. Pour this mix to the flattened eggplant and spread well
6. Transfer the final mix to a heated pan greased generously with oil
7. Add grated cheese on top and cook for 2-3 minutes
8. Turn slowly and add remaining cheese on the other side and cook for another 2-3 minutes
8. Transfer to a serving dish and eat hot
